In the late ’60s, it became the Hide Out, a biker haven with a beer-drinking donkey. By 1979, it was transformed into a Mexican hideaway by Federico “Lico” Miranda and Gary O’Neal, and named Senior Lico’s.
After Lico’s closed 25 years later, the Beardslee sisters reopened it as Rose Canyon Cantina and Grill. In 2005, regulars John and Melanie Cox took over ownership, continuing the legacy of this beloved spot.

I love to sit under the old trees, now strung with lights, and the new fountain adds even more relaxation to the atmosphere. It’s not every day you see locals ride in on horses and tie them up at the post, making it feel like a scene from a Western movie. And catching sight of deer on the nearby hill? That’s just magical.
Parking’s easy, and there’s this side area with picnic tables perfect for dining with rowdy kids, though I prefer the other patio area.
Reservations are a must for outside seating, especially on busy weekends. Discovering the kids’ menu was a game-changer; even my pickiest eater is happy with a burger from there now. But they also have Mexican style dishes for kids.
Birthday dinners are a blast with those fun Mexican hats they give out to wear while you dine, and a free ice cream for the birthday guest. You can’t keep the hats but you’ll keep the memories!
The staff, many of whom have been there for years, have always been great to me. Even though it gets chilly at night, the heaters do their job, but taking a jacket is recommended.
I’ve tried a lot from the menu – tacos, fajitas, salads, enchiladas, you name it. My top picks? The Sizzling Fajitas, Carne Asada platter, Flat Iron steak, and Chicken Enchiladas.
And for drinks, the blended Prickly Pear Margarita and Sangria hit the spot. Dessert means cheesecake for me.
